Yvan Jouanin, the owner of the Clas du Large is the grandson of the last ship owner - oyster producer of Cancale.
His grandfather sailed on a traditional sailing ship, La Reine du Ciel, so, lovely that a model of her can today be seen in the Musée de la Marine in Paris. Yvan himself uses a tractor for visiting his oyster beds. The heart of the job stays the same : to offer to their customers the great oysters of the bay of Cancale..
